I LOVE ROASTED ZUCCHINI!! I truly am obsessed. I've had roasted zucchini with every meal for at least 3 weeks now. Please excuse my ancient baking pan, and you can also ignore the less-exciting roasted asparagus (although it was pretty delish, too). Salt and garlic powder, pop in the oven for 15-20 minutes (or as long as it takes to cook the rest of the meal) and that's all this zucchini needs. Wanna guess one of my favorite roasted zucchini accompaniments?? SCRAMBLED EGGS! Or, in my case, 1 whole egg and 2 egg whites.
