I made a homemade "salad dressing" that consisted of a scoop of plain, low-fat yogurt, a scoop of spicy salsa, as well as a super small amount of fresh tomato and like a pinch of cilantro and garlic powder that I had just lingering around. Super simple and super delicious!
The taco salad bowl things have been a favorite of mine for while now. A bed of lettuce, topped with some sort of spicy dressing, then bedded with veggies, chicken, more dressing, and possibly cheese? UMMMM, YES! I finally deviated from my corn aversion due to the carb warning, since the mister brought home a few bags of this steam-fresh "super sweet" corn stuff that, when tossed with some butter, was SO amazingly good. SO not disappointed, and since, like a good girl, I've avoided carbs for the past few days, I felt that I deserved it. Plus the sharp cheddar cheese, oh boy... Super yumbo, and super worth it!! I decided to use my own "homemade" taco seasonings for the chicken, and sprinkled on some cajun seasoning, garlic powder, chili powder, and my much avoided cumin. Plus the sliced onions for that "grilled" flavor, INCREDIBLE!
