While the "zoodles" didn't taste entirely like pasta, they certainly didn't taste like zucchini, either. They were slightly crunchy, but fully absorbed the flavor of the meat sauce and were the perfect complement. Double thumbs-up from the hubby, along with a "once-a-week" request! Not only was it super yumbo, but I got the hubby to eat almost a full zucchini without him knowing it. VICTORY!
I've lost my zoodle virginity! I love zucchini, and lately it's been my roasted obsession (especially with breakfast. If you've never tried scrambled eggs and diced roasted zucchini, you are missing out on a crucial piece of your life. More on this awesome low-carb breakfast later). I just bought a spiralizer-tool after putting it off forever ($6.19 and free shipping on eBay) and as soon as it arrived in the mail, I firmly decided to make zoodles and meat sauce for dinner, hubby and his vegetable-hating ways be damned. Little did I know, SUCCESS!! The pics are terrible; not only was there no flash but I had already dug into my paper-plated awesomeness and was so engaged that I didn't even care about taking better pics. I'm not sure of the exact count, it was probably 90% or 93%. Let's put it like this, it was so up there that there was no grease in the pan to drain off.
