Oh, boy, these were just incredible. I thought that they would take all day, but after 3 hours these puppies were DONE. And, by done, I mean, I tried to lift up a rib by the bone for serving and the meat just slid off onto the plate. Incredible. OMG.
I started with a dry rub and let that puppy sink in over night. It was just a basic rub of onion powder, garlic powder, chili powder, some seasoned salt, a little brown sugar, just the usual. Then, I covered it all in foil, stuck the ribs into the oven on 275-ish for about an hour, which produced the above results...
Then I poured on some BBQ sauce. This one was a Texas style one, which I didn't find incredibly spectacular, but I searched through the fridge and found my trusty (and cheap!) brown sugar hickory whatever barbecue sauce. I just mixed it in to the sauce shown above, which produced a surprisingly good flavor. See those two little meat blobs on the left? One was like, these adorable little leftover baby ribs after I separated the rack (half went into this dinner, the other half into the freezer), and the one on the bottom is just a big 'ol hunk of boneless meat. Fuck yeah. But also no, because it dried out just a little bit.
While the ribs were slow roasting in the oven, I whipped up a rustic, super random potato salad that started as traditional potato salad with mustard and mayo, and eventually became a bacon ranch potato salad. I could barely give a recipe outline, but it included a hard-boiled egg, mayo, mustard, a little ranch dip powder, some bottled ranch dressing, and some green onions. Plus some diced bacon, which you can see on the hubs plate:
3 hours, juicy tender ribs, some potato salad, corn, and rolls. That makes for a pretty spectacular dinner. Thank you and good night.
