One of my absolute favorite purchases and absolute necessities when I do my shopping at Wal-Mart have to be these John Soules precooked meat packages. The chicken fajitas, beef fajitas, and beef steak are absolutely AMAZING, perfect for tacos and such, and SO quick and easy to use on those days where I'm super tired and don't wanna cook. AND, each package is only about 100 calories for the two servings that it provides, which works out perfectly for us. When I made these beef fajita-taco guys, one package was enough for 5 corn tortillas. Yessss. Winning. Of course, I had to make bacon to go with this meal, because, well, why not? I've been cooking straight from my freezer lately, and quite honestly I wanted to get rid of the ugly, shredded, bulky block of whatevs that my package of bacon had turned into. See that cheese? Frozen, pre-sliced pepper jack that had turned to crumbles during the freezing and dethawing process. It tasted awesome, but just looked butthole-y. I also made some frozen plantains that I had in the freezer, cuz they are super good. But can we please move on to my Spanish rice?! It came out awesome. I have, like, 20 Spanish rice recipes, but this one came out SUPER good. It started with 1/2 cup of rice. Then, in my measuring cup (I've never done this before, so it's a new thing!) I added in 2 tablespoons of some hot salsa, then filled the rest of the measuring cup with water. Sprinkle in a bit of onion and garlic powder, then 1 teaspoon of some chicken bouillon or, if you have it, tomato bouillon. After the mister's exclamations on "the best Spanish rice I've ever made", I've realized that it's all in the texture. I usually dump in salsa, sometimes, or extra liquidy stuffs AFTER I add in the water, when I should have been measuring them out together. Uhhh, duhhhhhhhh. By the way, I added about 1/8 cup of water after browning the steaks, plus sprinkled on a bit of extra seasonings, but only just because i wanted them to be saucy-ish. I ended up adding tonssssss of salsa to them (cuz I just got my new fridge, yesssss!!!!!) and these were INCREDIBLE!
