My "special" sauce for this burrito / buddha bowl round consisted of this: some greek yogurt, chipotle peppers and a bit of adobo sauce, +- half of an avocado, garlic + onion powder, and salt. Maybe a small dash to help add some liquid-i-ness. I just slabbed that stuff on my lettuce and manhandled it til it was covered like salad dressing, and it mixed in amazingly deliciously well during the bowl-eating. (I kept adding spoonful by spoonful til the yummy stuff was nearly gone)
I think that I am officially obsessed with these Burrito / Buddha bowls (haven't yet 100% settled on a name yet). These amazing bowls are so customizable and so delicious that I could eat them almost every night of the week. So far the mister has been okay with averaging about twice per week, but I'm still trying to gauge his opinion. When I made these, I was greeted with a moan and a declaration of, "OMG, the love has returned, best dinner I've ever had"." Of course, he says the same thing for pretty much every meal, but still. Of course, for the mister's bowl I cook up some white rice with chicken broth, and instead used quinoa for mine, but the results are delicious and super-healthy nonetheless. This time, as opposed to our previous bowls, I left out the store-bought Taco Bell Chipotle Sauce in the hubby's bowl and instead included my new experimental greek yogurt-chipotle-avocado sauce. Since this was the first time that I've left out his beloved sauce in these bowls, I was a little afraid of his reaction, but he ended up loving it!! I think one part of this successful meal was that I didn't super over-do it with the spiciness like I usually do, as I often get carried away. Once factor may have been the delicious, creamy avocado, which helped to reduce the spiciness. (I kept adding spoonful by spoonful til the yummy stuff was nearly gone) While the hubs had his bowl pretty basic with rice, lettuce, bacon, and chicken, I did manage to slip in a few roasted zucchini and squash bits, as well as a couple of diced avocado. My bowl, on the other hand, was gorgeously adorned with the works: quinoa, lettuce, chicken, a small amount of bacon, sauteed almost-carmelized onions, roasted zucchini and squash, diced grape tomatoes, and diced avocado. Plus like 5 kernels of roasted corn that I plucked off the hubby's corn on the cob, since it's the only veggie he requests and actually eats. Can anyone say....yumbo?!?!
