Who would have thought that a random, off-the-wall idea could produce something so delicious, so mouthwateringly amazing? I knew that the mozzarella in my fridge would soon be expiring, and the craving for pizza has been bothering me since the last time that I made pizza. I randomly stumbled upon a calzone recipe, and the hubs was all for it, accusingly asking me why I've never made it before. Whoops. I used refrigerated Pillsbury pizza crust and cut it in half, then cut a half in half for the calzones. The other half went into the freezer for next weekend's hopeful calzones, cuz these bad boys came out AMAZING. I laid the cut dough out on some foil sprayed with olive oil-flavored cooking spray, then stretched those guys out as much as they would go. I spread on a bit of pesto and a bunch of marinara, then cooked up the usual awesome pizza toppings; bacon, chicken, some of those awesome jalapeno pepperonis. The I added a bit of frozen spinach and, on mine, a few jalapenos and sauteed onions. Then I cheesed it up! Mostly mozzarella, but also some pepper jack because that stuff is good!! SLOWLY, CAREFULLY fold over the mostly naked half. Make sure to stretch it all the way to the other side! Then, use a fork to "crimp", or press, the edges together. It looks pretty, and it helps to keep all of that yumminess inside. Go ahead and sprinkle some yummy stuff on the crust, too. I used garlic salt, basil, oregano, and some Parmesan cheese. Yummm. 400-degrees for about 9-10 minutes, and Qwah-blam-o! The gooesiest, most delicious meal EVER. Maybe I should have left it in the oven for another minute or so, the crust wasn't completely solid, but man-oh-man. The mister again glared at me accusingly for never making these before, and then demanded that every Sunday become Calzone Sunday. He wants them again for dinner tomorrow as well. (I actually considered for much longer than I'd like to admit.)
