Since Mr. Nikki's Kitchen doesn't usually view a salad as a complete dinner meal, I chose to make his Mediterranean chicken in sandwich form, along with some wings and a few "pizza bites" that we found on sale at Walmart. YAY, sales!!
I'm almost embarrassed to admit that, until close to the date of this post, I'd never tried a "Greek" or "Mediterranean" salad, and had definitely never tried Tzatziki sauce. Admittedly, I still can't even pronounce Tzatziki. But when Subway, one of my fave fast food chains, rolled out their new Mediterranean sub lines, and I tried that creamy sauce, I knew that I had to buy some and try it out in my own recipes. Since Mr. Nikki's Kitchen doesn't usually view a salad as a complete dinner meal, I chose to make his Mediterranean chicken in sandwich form, along with some wings and a few "pizza bites" that we found on sale at Walmart. YAY, sales!! After marinading in a "Greek" marinade of oregano, lemon, white wine, basil, and stuffs like that, I just browned up the chicken in my fave skillet. Of course bacon was a must; not only is it the awesomest food in the world, but if everything else sucked, then at least the bacon would be good!! So for both plates I just poured on some tzatziki sauce, threw on some feta, gave myself a few pepperocinis and called it a day. YES, yummy, but at the same time, I thought that the store-bought tzatziki would be better... Apparently, tzatziki is made of greek yogurt and cucumber, and I could PROBABLY make it better... but it was decent. The feta was the real star.
