It was such a disappointment, revising and baking my mom's old recipe and enjoying the INCREDIBLE TASTE, just to look back later and see the terrible quality of these pics. I swear to everyone reading this, THIS RECIPE IS OT JUST A PILE OF MUSH. It is not gray. It is not ploppy. It is yellowy with cheesiness and tastes like heaven in your mouth. I don't remember my mom cooking for us much when we were kids, with the exception of this dish. Chicken Broccoli, as we always called it. Served over white rice, of course. She always made it with Campbell's Cream of Broccoli soup, frozen broccoli, and some kind of chicken with shredded cheese on top. Unfortunately, I've never been able to find that creamed soup in the fridge, but the other day I found a can of condensed Broccoli Cheese soup in my cabinet and I just knew. I had to make this. I texted my mom as soon as I made it, I was so proud. I mixed in bacon. I added some shredded extra sharp cheddar on top. I included some sauteed onions and garlic powder. I served in on white rice. The hubs even ate the broccoli and exclaimed afterwards that this dish needs to be on The List (which is basically weekly or bi-weekly meals that he loves). So I won. This dish was a success, terrible pictures be damned. Cheesy. Chickeny. Broccoli goodness. Plus bacon, which on the side was EXCELLENT, but mixed in was (ahhhhh, don't say it nikki, don't say it) a bit overlooked (i've betrayed myself, i'm so sorry).
