I grew up on cream-of-mushroom-chops, or dried out chops with applesauce, so I figured that he had the same issue that I previously had; that is, over-cooked, bone-in-little-meat dried out pork chops, a traumatizing incident from childhood. So, one night I made smothered crockpot (bone-in) chops, and after cleaning my plate and noticing meat still on his, his defense again was his hatred of pork.
That almost killed me, because out of the 3 packs that my MIL gave us, 2 were the classic, store-bought pork chops, and one was a pack of the most gorgeously thick boneless chops that I have ever seen. Seriously, these pork chops. I don't think that I've ever referred to a package of meat as "gorgeous" before I saw these chops. OMG.
Since he LOVES my bacon-wrapped stuffed chicken, I decided to try something similar with these gorgeous pork chops. A few hours marinating in fat-free Italian dressing + dijon mustard, then stuffed with bacon and cheese, plus a piece of bacon wrapped around the beautiful package for good measure, and the hubby was sold. He didn't even know that it WASN'T chicken, until I said so. And after his "mostly" exaggerated over-reaction of "Oh, this is pork? I loved it, but now I can't even eat anymore, not a single bite more", I "assured" him that it was chicken (LOL) and he cleaned his plate. So, if I'm not the only one with a pork chop hating hubby, PLEASE try this out!! Here's what I did:
Stuff your browned chops with the fully cooked bacon, cheese, and maybe some caramelized onion (like I did for mine), or whatever suits your fancy. Wrap with the partially cooked bacon strip and secure with some toothpicks.
