It may be cheating, as this recipe is kind of a variation of my beloved "Buddha / Taco Bowls", but since my darling lover has requested this recipe at least 3 times in the past 8 days, I'm going to go ahead and have it count as a new, separate recipe. Perhaps it's the cheese, or perhaps it's the new sauce/salad dressing recipe. I swear, it's so simple that I just about smacked myself on the head, since for weeks now I've been trying out every combo of greek yogurt, mayo, chipotle peppers, jalapeno, dijon, honey mustard, olive oil, garlic, you name it, trying to find the absolute saucy recipe.
Here's what you'll need:
For the chicken:
Garlic + Onion Powder
One BIG spoonful of salsa, thrown right into the pan when the chicken is almost done cooking.
And one spoonful of the awesome-sauce, if you're feelin' frisky.
For the salad:
For the INCREDIBLE, super-amazingly easy sauce:
Equal parts of greek yogurt and hot salsa (I use Pace Hot, since it's spicy enough for my high-tolerance tastes, plus doesn't have a boring or bad flavor)
