Oh my goodness. This random idea came together so perfectly well, and so deliciously awesome, that I can't even describe it. I had some cream cheese that I needed to use up, some jalapenos just chilling in my freezer, and a wildly random thought began to form in my head. Jalapenos + cream cheese = jalapeno poppers. Chicken thighs + jalapeno poppers = stuffed yumbo chicken. Stuffed yumbo chicken + bacon wrapped goodness = epic jalapeno popper chicken. Epic jalapeno popper chicken + barbecue sauce = OMG.
This recipe is sooooo easy. The hardest part was skinning and deboning the chicken thighs, and the deliciousness of the recipe totally makes up for the effort.
One thing I will note is that I cooked my chicken uncovered for the entire time, and a few edges of the bacon became super crispity and a tiny bit burnt tasting. I might cover the pan about halfway through next time, because there will DEFINITELY be a next time. A ton of next times.
